Plan ahead with our Meal Prep Breakfast Burritos. Make a batch over the weekend and enjoy a week’s worth of fluffy scrambled eggs, crispy hash browns, melty cheese and more on a soft flour tortilla. Ingredients
- Tortillas
- 6-8 Eggs
- 1 Cup of Tomatoes
- 1 bag of Hashbrowns
- 1 Cup of Cheese
- Cilantro
- 1 can of Refried Beans
Directions
- In a large mixing bowl, mix scrambled eggs, tomatoes, cooked hash browns, cheese, refried beans, and cilantro (as desired).
- Once mixed, scoop approx. 1 cup of mixture onto a flat tortilla and roll into a burrito.
- Wrap the burrito in aluminium foil. Repeat until mixture is gone.
- Store burritos in refrigerator until ready to eat. Reheat burritos in oven for 10 minutes at 425 degrees.
